All the things I read say the BIOS drawing routines are slow and you shouldn’t use them. Then all the tutorials all talk about the BIOS routines.
Is there a good tutorial on non bios drawing?

Premature optimization?
Maybe look at the BIOS function descriptions and source code and the hardware circuit diagrams to understand how they work before trying to improve on them.
Alternatively, dig into Malban's VIDE source code library for Release or Karl Quappe.
I reckon the built-in BIOS functions are fine to get you going, you can always customize them later if you need to.
